Goji Berry Ripe 🍒

Raw, full of nutritional goodness, satisfying + full to the brim with loveliness


 

CHEWY GOJI COCONUTTY BASE

1cup       Dried Organic Goji Berries 
1/4cup   Organic Coconut Oil, softened
4cups     Organic Shredded Coconut 
1/8tsp    Himalayan Salt
1 Tbs      Vanilla Powder
2Tbs       Raw Organic Cacao Powder
2Tbs       Almond / Nut butter (or Tahini for nut free alternative)
3Tbs       Rice Malt Syrup
1 Tbs      Maple Syrup
2drops  Cardamon Essential Oil*
3drops  Cinnamon Bark Essential Oil*

CHOCOLATE TOP COAT

1.1/2cup  Organic Coconut Oil, softened
1.1/2cup  Organic Raw Cacao Powder
3/4cup     Maple Syrup
1Tbs          Rice Malt Syrup

Pop goji berries in a food processor until fine
Add coconut oil and shredded coconut until well combined
Add salt, vanilla powder, cacao, nut butter, rice malt syrup and maple, then process until thick.

Line a suitable slice tray with baking paper or grease with coconut oil.
Press the yummy mixture into the prepared tin and place in fridge or freezer until firm (1/2-1 Hr)

 

To make the chocolate top coat> Place the warm coconut oil, cacao and syrup in a processor or processor and mix until gooey.

Either spread the chocolate mix over the top of the base (quick-eat-me-now-version)
Or.. Slice base into bite size pieces and dip each into the melted chocolate and coat evenly.
Pop on a wire rack to allow the excess to fall away and the remaining choc to set.

Store in the fridge + enjoy IMMENSELY!
